The salad is often relegated to a side dish, but in truth, if we’re interested in building strong health, the salad should take center stage as the main dish of our meals.

Here are some ideas to help you build a healthy and nutritious plant based salad. Begin with your greens and then add different toppings to make beautiful salad dishes. Mix and match for different flavors and quantities. As you become a salad making expert, expand this list and experiment with different nutrition dense foods, herbs, and flavors. Have fun creating!

Tips:

Massage kale between your hands before chopping to make it softer and easier to chew. I usually use baby kale, but if using regular kale, I process it small in the food processor.

The smaller you cut your salad fixings, the more of them you will eat, meaning more nutrients. 

Some people experience mouth ulcers or canker sores when they mix tomatoes with fruit and/or nuts. Apples are usually an exception. See how you do.
